Roasted Sweet Potatoes

Wash and scrub potatoes. Cut them in big wedges with skins still on. Dip in olive oil and put on a cookie sheet. I use foil to line the pan. Salt with coarse Kosher or Sea Salt. Bake at 400 degrees for 10 min and then turn potatoes and bake 5 more minutes.  The salt really brings out the sweetness......YUMMMY YAMS!
