Miss Ruthie's Little River County Methodist Church Funeral Burrito Casserole
Here's what you'll need to pass this culinary miracle:
1 to 1.5 lbs of hamburger meat, adjust for how much meat you like
1 large yellow-sweet or Vidalia onion chopped up
1 can of Rotel tomatoes, regular or get fancy if you want
1 can of Cream of Chicken soup
2 cans of Ranch Style beans
shredded cheese of your choice
Velveta cheese, I use it in the block form
10 flour tortillas
1 can of Pam spray
1 stick of butter
2 big bags of Mexican chips
salsa & sour cream
a deep love for your fellow humans!
Brown the hamburger meat in a large skillet cause you'll add stuff
Throw in the onion you've chopped, simmer till the onion is tender, drain.
Add the can of Rotel, add the juice if you like spicey
Add the Cream of Chicken soup and the beans and mix it up while it simmers
Dig out your favorite large casserole dish and butter it up
Warm up the tortillas and by folding most in half line the bottom of the buttered casserole dish neatly
Move the skillet of yummy off the stove and put a thin layer of it just covering the bottom of the tortilla lined casserole dish
Add a layer of your shredded cheese then another layer of floured tortillas followed by another layer of your skillet fixins with more shredded cheese covered with another layer of floured tortillas.
Pour the rest of the skillet fixins in next and then add the Velveta topped with the last of the tortilla to cover it all up. Spray this with Pam so it won't get too crunchy and put it in an oven preheated to 375-400 for 30 minutes or until the top tortillas become your brand of golden.
Go relax in your coolest room, have a drink and think of good friends like and get ready for a wonderful smell from your kitchen followed by the best stuff you've ever eaten.
30 minutes or so later assemble your salsa and sour cream to slather on top if you're a mind to and dig in. Oh, you might oughta let the finished product rest on top of the stove for 15 or 20 minutes before you dig in.
