To Die For Chocolate Cake/Pudding

Many of you may have made a cake/pudding but this was a first for me.  I got the recipe from my Heart of Texas Electric Coop magazine.  I made one last week and one this week.  Yeah......we love chocolate!

Ingredients

1     Cup all-purpose flour

2/3  Cup sugar

2      Teaspoons baking powder

1/2   Teaspoon salt

1/2   Cup cocoa powder divided into 1/4 and 1/4

1/2   Cup of milk

2      Teaspoons melter butter/margarine

1      Teaspoon vanilla extract

1      Cup brown sugar, packed

Preheat oven to 350 degrees.  Grease an 8 x 8 inch glass baking dish. 

Combine flour, sugar, baking powder, salt, and 1/4 cup of cocoa in a bowl.  Stir in milk, butter and vanilla.  The batter will be sticky? and sort of thick in the middle of the bowl.  Scrape into the 8 x 8 and smooth evenly.

Put 1 and 1/2 cups of water on to boil.

In a separate bowl, mix the brown sugar and 1/4 cup of cocoa.  Sprinkle evenly over the top of the batter.  Pour the 1 and 1/2 cups of boiling water over the mixture.  DO NOT STIR!!  RESIST THE URGE TO STIR!!

Bake 30 minutes on middle shelf of oven.  Batter will separate and make the top layer cake and the bottom layer pudding.  Don't ask me how come, don't know.  It just does.  Cool on wire rack and serve warm.
